Alicia had her 8th birthday and so I made a birthday cake for her! Believe me, I was stressed because I’ve never baked any cake in my life and never made a raw one either, especially without a recipe. And for my daughter’s birthday! I don’t know why I decided to do it like this because if something didn’t work I’d be stuck. So I’m glad it did work and that it was delicious.
As some of you know Alicia isn’t a fruitarian, she’s not even vegan. I sometimes give her new and new things to try and she sometimes likes them, sometimes not. I proposed I’d make a cake for her and she was happy with the idea. When asked what flavor she said: “chocolate!”
So it was a challenge for me because I didn’t really know how to create this flavor in a raw version because in general we don’t use cocoa. So I was thinking about it for a while and then I was like ok I’ll just make it and I’ll create the recipe while putting things in the blender. I’d taste it every minute to find a taste that I liked the most. And believe me, I’m proud of myself again! Alicia was amazed and other who tried it were too.
I wanted to put a second chocolate layer on top of the cake but the whole thing was already pretty rich so I decided to just decorate it :).
The only thing I’d change is that I’d put it into a freezer for around 4 hours before serving because the nut layer turned out very soft. It still held in place but I’d like it a little harder.
