#61 Breakfast with Aga – food I made for Thanksgiving

In the last week

There was Thanksgiving! We don’t really celebrate anything too much and Thanksgiving isn’t even in Poland so I simply don’t care. However, Margie invited us and Alicia’s mother to her place for a dinner so we obviously went there. Turned out that we could eat whatever we made only ;). And I felt sad in general because I heard words like “gross” before even trying anything. And why? Because everything was raw. I spent a lot of time making all that because I wanted others to see that it’s not what they think when you’re a raw fruitarian so that’s why I decided to make something different than bringing a fruit bowl. But okay, whatever. I’ll show you what I made and I’ll also give you recipes below! And by the way, now when we’re done with Thanksgiving there are Christmas decorations everywhere. Stores are full of Christmas stuff and a lot of people already decorated their trees.

I also need to add that we have a beautiful fall! The main photo of this post is one of the trees in front of our house, they look beautiful. If it comes to the weather, it’s around 20 degrees C (68F) and yesterday I was outside in a short sleeve shirt but now (7 am) it’s only 5C (41F). The predictions say that it’ll rain next week which is good because we didn’t have any rain for two months or more.

Pumpkin pie

Crust

1 cup of pecans

pitted dates – enough to make it all sticky and enough so that it’s sweet enough for you

I put pecans in a boiling water and left them to soak for the night (raw nuts have a lot of toxins and our bodies have big problems digesting them). In the morning I blended dated with pecans, put it on a paper on a pan getting it up all the way.

Filling

1 small pumpkin

1 ripe persimmon

a few pitted dates

I blended all of it until smooth and I put it on the crust.

White balls

1 cup of cashews

half a cup of coconut water

lemon juice

I put cashews in a boiling water and let them soak for the night. I blended everything together. I don’t have that special thing to decorate cakes but if I did it’d look better. I used a plastic ziploc bag instead. I put the pie to the freezer for around two hours and then put it in the fridge after this time.

Noodles

I just this thingy to make noodles.

Sauce

1 cup of pine nuts

half a cup of coconut water

sun dried tomatoes

I put nuts in a boiling water and left them to soak for the night. I soaked sun dried tomatoes in a warm water for around half an hour. I blended everything and mixed with noodles. My sauce looked more like some kind of a cheese because I didn’t have enough coconut water, you can adjust everything.

Cracers with avocado dipping sauce

Crackers

5 plum tomatoes

1 cup of sun dried tomatoes

3/4 cup of flax seed meal

1/4 cup of sunflower seeds

I put sunflower seeds in a boiling water and left them to soak for the night and I soaked sun dried tomatoes in a warm water for around half an hour. I blended everything and put it on a paper on a baking sheet. It’s important to put it the way that it’s all smooth and the same thickness. I put my oven on the lowest temperature (in my case it’s 79C / 174F) and I put the cracker inside leaving the door a little opened. The cracker is drying (drying, not baking!) for around 5 hours or more (depending on the temperature and its thickness) and then you need to flip it to the other side. I was checking it from time to time to make sure that it’s dry enough so that I’d be able to break it in smaller pieces. I think that in this case you could use for example zucchini instead of tomatoes if you’d like a different flavor.

Dipping sauce

1 avocado

1 medium cucumber

lettuce

I blended it all together and that’s all. If it comes to proportions it’s up to you what you like. If you want your dip to be more creamy add more avocado and if more liquidy – more cucumber. I’ll add more spinach if I make it next time.

Of course, you can add some spices to it or whatever you want. We don’t use any because we think that this kind of food has enough flavor and there’s no need to add anything else to it.

Song of the week

I was talking to Monika about what we listened to when we were kids and turned out we both had a similar taste! One of the bands we both liked a lot was Sugababes and I started remembering their songs (and I still listen to some) so I’m adding my favorite one below.

To watch

I can’t remember if I ever showed you this YouTube channel or not… If I did I’ll do it again now because not everyone saw it anyway. I really like to watch OKbaby – two young parents (both were 19 when they had their first baby) who now are awaiting their second baby, the first one is a year old. They make daily vlogs so there’s a lot to watch. I found their channel while looking for pregnancy videos when I was pregnant and even though I saw tons of them on different channels, this is the only one that I watch on a regular basis. Because they’re so… normal. Really. Random people, honest and not showing how crazy awesome they are and how many cars they can buy…  I really recommend :).

A different me which I like a lot 😎 So I loved the pumpkin pie I showed you last time but people didn’t really want to try just because “it’s not baked” 😐 It’s kinda sad because, let’s face it, the reason is pretty lame and also I spent a lot of time working on things.
